Ingredients

8 1/2 oz (240 gram) Chicken Breast Fillet cut into small pieces
1/2 cup Onion chopped
1 Apple (medium) peeled and chopped
2 tsp Curry Powder
1 cup Water
1 tsp Cornstarch
1 tblspn reduced sugar Tomato Ketchup
1.5 oz (40 gram) raisins or sultanas
1 tsp Brown sugar
1/2 cup (130 gram) Vegetarian Baked Beans
1/2 cup Brown Rice
Directions
Cook rice put aside.
Spray skillet with canola spray and cook chicken until golden grown, set aside.
Saute onion, apple and curry powder until aromatic, Add 1/2 cup of the water and stir.
Blend remaining water into cornflour and add to skillet, stir.
Add Ketchup, raisins, sugar and chicken and simmer for 15 minutes until apple is tender. Add Baked Beans and cook until heated through.
Serve with the Brown Rice.
