Ingredients

Chicken Drumstick, 4 drumstick, skin remove
Chicken Thigh, 4 thigh, skin removed
Cabbage, savoy, fresh, 4 cup, shredded
*aubergine, 2 medium size, round slice
Onions, raw, 1 small sliced
Olive Oil, 4 tbsp (remove)
White Wine, 1 glass (3.5 fl oz)
*Soy Sauce, 1 cup
Garlic, 4 cloves
Salt, 1 tsp
Directions
First, start with removing the skin of the chicken thigh and drumsticks, because that's where most fat is. After removing the skin, put the chicken in a bowl adding most of the soya sauce (leaving 1/4 out) to marinade the chicken in.
Slice the onion and the aubergine on round slices. Heat 1 tbsp in a pan and toss the onion first untill golden browm and then the aubergine until the aubergine is 3/4 cooked. Add a little bit of wine to ease the heat and adding flavor, Scoop the mix out of the pan and set aside.
Heat 1 tbsp in the same pan and toss in the Savoy cabbage and cook untill crispy. Mash the garlic and add to the cabbage. Now add a bit of soya sauce about 1tbsp and then the rest of the wine. Quick add the aubergine and let is cook on a low heat untill the aubergine and the cabbage are really cooked. Season to taste with the salt
In a frying pan, heat the remaining 2 tbsp of oil and add ALL the chicken, adding the remaining marianed of the soya sauce to it. The marianed should just cover about the bottem of the chicken. If this is not the case, you can add some water because there is the option to make a sause out of this juice.
Cook the chicken on meduim/low heat covering the frying pan with a lid to alow the chicken to absorb the soya sauce and cook in its own juice. Turn the chicken after 5 min and leave to cook for another 5 min or untill cooked the way you like it.
Then serve the chicken with the aubergine & savoy cabbage.
SERVING TIP:
1)as a treat, you can make a sauce from the remaining chicken juice/marianed. Just add some(1 tbsp) philadelphia soft cheese and stir on low heat, adding water if needed.
2) The healthy option is to serve it with some salad.
