Ingredients
-
1.33 C Skim Milk - lukewarm
3T Unsalted Butter - soft (mooshy) room temp
3T Honey (or sugar)
1 xlg egg - gently beaten
1 packet rapid rise yeast
1.5 C White Whole wheat flour
2.25 C White bread flour
1.5 t salt
2t baking powder
.5 C fresh cranberries, cut in half
.5 C dried cherries
.5 C chopped pecans
.25 C chopped cashews
1 cap (.5t) orange extract
Directions
Bread Machine - - I use the breadmachine for mixing and proofing, but bake in the oven. This recipe is for a 1.5 - 2 pound machine.
No more than 30 minutes of hands on prep time, plus a few hours for the mixing and rising cycles.
FLOUR - if you can't use "white whole wheat" don't substitute wtih whole wheat flour - it would be too heavy - just use plain white. When measuring your flour, be sure to whisk it gently (not sift) prior to measuring.
BAKING POWDER - if you're not using the white whole wheat, you can exclude this ingredient
MILK - should be lukewarm - at LEAST room temperature, better too cool than too hot.
BUTTER - can be substituted with margerine
HONEY - can be substituted with sugar or splenda
In the pan of the breadmachine, mix the honey, milk, egg, orange extract, and butter. Put in the yeast. Whisk the flour, salt, and baking powder together, and "dump" on top of the liqids. Put in bread machine and start on WHOLE WHEAT setting. During the final mixing cycle, dump in the fruit and nuts.
Form into two loaves, place in greased bread pans, and cover with a damp towel or sprayed plastic wrap. Allow to rise in a warm spot until about doubled in size.
Bake at 350 degrees for about 35 minutes.
Makes two loaves. The nutritional information is for 20 slices per loaf - just under half inch slices, for most bread loaf pans.
