Adapted Ines' favorite Banana Bread recipe by changing 2 eggs to 4 egg whites; and changing the sugar to Splenda; and changing out 1 cup of white flour to whole wheat flour. Ines always baked in her bunt cake pan. I used muffin pans and made 24 servings for portion control This recipe might have originated with the Purdue Extension office.
One muffin is about 20 grams of Carbohydrates = one diabetic carb.

These cookies are among the most favorite in Norwegian holiday baking. They are a little tricky to make, but if you persevere you will be rewarded with a buttery almond cookie with the unique ingredient of hard boiled egg yolks! A gorgeous addition to the holiday table!
I modified the recipe for some yummy cookies someone made us from Germany. Switching the cereal to Kashi and adding a bit of protien powder brings each cookie in at 104 calories and 3 grams of protien. I nice treat!
These are super-crunchy right out of the oven, but if you store them in a plastic container or bag they go soft very quickly! To keep them longer than a day or so, I like putting them in a tall drinking glass where the air can circulate. Of course, you can always re-crisp them in the oven at 350F for about 6-8 minutes.

No butter, milk is optional, I used water in my recipe because I was out of milk, and no baking powder needed. These muffins come out very moist like a cake.

We make these for Christmas. Usual tradition, in Saskatchewan, is to make them when the first snow falls. Each serving is 10 peppernuts
Beat Eggs, milk, flour until smooth. let batter rest. coat 2 pie pans with butter spray. combine sugar and cinnamon with apples and put in bottom of two pie pans. Pour batter over and bake at 425 for 20 minutes.
