Introduction

Ingredients

225g flour
105g sugar
90g butter
1 egg
coriander, ground
cardamom, ground
cinnamon, ground
nutmeg, ground
cloves, ground
lemon zest
Directions
Take the butter out of the fridge to soften or warm it up in the microwave (a few seconds).
Mix all ingredients thoroughly until the dough is soft and smooth, add spices to liking.
Cover the dough and put it into the fridge to chill (min. 1/2 hour).
Preheat oven to approx. 160-180°C (fan).
On a clean, flat surface (sprinkle with sliced almonds, if you like - they will then cover the backside of your cookies) roll out the dough (~4 mm high) and cut into shapes with cookie cutters.
ALTERNATIVELY you can also use special "spekulatius"-shapes (see photo). Just take a small amount of dough and press into the shapes, making sure the dough covers the gaps for the decoration. Sprinkle with almond slices.
Put cookies into oven and bake them for about 5-7 minutes (until golden-brown or like desired).
Watch cookies closely; they are quite thin and can burn easily!
Enjoy with hot (spiced) tea or coffee!
