Introduction

Adapted Ines' favorite Banana Bread recipe by changing 2 eggs to 4 egg whites; and changing the sugar to Splenda; and changing out 1 cup of white flour to whole wheat flour. Ines always baked in her bunt cake pan. I used muffin pans and made 24 servings for portion control This recipe might have originated with the Purdue Extension office.
One muffin is about 20 grams of Carbohydrates = one diabetic carb.

Number of Servings: 24

Ingredients

    * Banana, fresh, 4 small (6" to 6-7/8" long) = 1.5 cups of over ripe bananas. Mash well.
    * *Splenda No Calorie Sweetener, 72 tsp = 1.5 cups
    * Baking Powder, 2 tsp (remove)
    * Salt, .5 tsp (remove)
    * egg white, fresh, 4 large (remove)
    * *Canola Oil, .5 cup (remove)
    * Milk, nonfat, .5 cup (remove)
    * Vanilla Extract, 1 tsp (remove)
    * *Flour, white, 2.5 cup (remove)
    * Flour, whole grain, 1 cup (remove)
    * Walnuts, .3333 cup, chopped (remove)

Directions

Preheat oven to 350 degrees F.
Prepare baking pan or muffin pan by greasing and flouring.
{I only sprayed with Pam and it worked well.]
Mix ingredients in the order listed. Before adding flour, beat with mixer only long enough to incorporate. Add Flour and beat with mixer only until all is incorporated. Stir in [optional] nuts. {nuts are included in the calories]
Fill baking pans about 3/4 full.
Bundt pan: bake at 350 for 50 to 55 minutes [Serves 12-16]
Muffin pan: bake at 350 for 30 to 35 minutes. [Serves 24]
Test with toothpick.
Cool for 15 to 20 minutes.

    Not really LOW CARB if you are truly counting carbs. Beware of being told something is low carb-as this recipe is listed in the low carb section. My daily carb limit is 30-this would be over half my amount for the day. No thank you. - 10/24/10
