Introduction

This is an adaptation of a sparkpeople recipe. I added tofu and omitted spices. This is an adaptation of a sparkpeople recipe. I added tofu and omitted spices.

Ingredients

    3 tblsp onions
    1 package frozen spinach
    2 large eggs
    1/2 cup egg beaters
    1/2 cup flour
    1/2 tsp baking powder
    1 1/3 cup 1% Milk
    1 cup tofu, firm
    1/2 cup feta cheese

Directions

cook onions in olive oil. drain spinach, add to onions. crumble tofu and add to mixture. cook 5-10 minutes. in large bowl, whisk eggs and egg beaters, flour, baking powder. whisk in milk, then stir in spinach mixture. pour into greased tart/quiche pan or pie plate. top with feta cheese. bake for 25 minutes on 400 degrees or until center is set and outside edge is golden brown. let set for 5 minutes, then slice and server.
