Introduction
I adapted this from a recipe I found. It's simple, healthy and has countless possibilities for leftovers! I adapted this from a recipe I found. It's simple, healthy and has countless possibilities for leftovers!Number of Servings: 8
Ingredients

6 Medium Potatoes (I used russets, but most kinds work)
3 Yellow Onions Small/Medium (Again, you can use almost
any type)
2T Olive Oil
2t Montreal Seasoning (Mc Cormick Grillmates)
Directions
Heat up the olive oil in a nonstick frying pan on medium heat.
Dice potatoes into 1/2in cubes and put in heated pan.
Sprinkle on the Montreal seasoning and stir until potatoes are coated.
Cook for about 20min stirring occasionally.
While potatoes are cooking dice the onions into 1/2in cubes.
Add onions to the pan and cook for 10 more min or until you reach desired texture. (I like my potatoes more al dente.)
Notes:
-If your potatoes are browning too fast turn down heat.
-The first time I made this recipe I used raw potatoes. To cut down cook time You can use leftover baked potatoes.
-The reason this recipe is so large is because I freeze the leftovers and use them for a quick breakfast by adding an egg or turkey sausage, and some cheese, or veggies I have on hand at the time.
