Introduction

Ingredients

    3/4 cup packed brown sugar
    1 cup peanut butter
    1 large egg
    1/2 cup skim milk
    1 tsp vanilla extract
    1 1/2 cup whole wheat flour
    3/4 tsp baking soda
    1/2 tsp cinnamon
    1/4 tsp salt
    1/4 tsp nutmeg
    1 1/2 cup oats
    3/4 cup raisins
    cooking spray

Directions

Preheat oven to 350 F. cream brown sugar and peanut butter at medium speed of mixer until light and fluffy. Add egg and beat well. Add milk and vanilla, beat well. Combine flour, soda, cinnamon, salt and nutmeg; gradually add to creamed mixture, beating well. Stir in oats and raisins. Drop by rounded tablespoonfuls onto baking sheets coated with cooking spray; press down lightly. bake at 350 F for 7-8 minutes or until lightly browned. Cool on wire racks

Serving Size: makes 60 cookies one cookie per serving
