3 tbs red curry paste
1/2 cup chicken broth
6 oz coconut milk
8 oz bone/skinless chicken
2 cups large dice zucchini
1 large and 1 small can mushrooms
1 cup fresh spinach
optional
additional red curry dry spice
chopped cilantro
Directions
in large saute pan add:
chicken
curry paste
coconut milk
chicken broth
bring to simmer and cook 5 min. (lid on)
add zucchini and mushrooms, cilantro and curry powder. allow to cook until zucchini gets soft.
add spinach and cover.
allow spinach to wilt (approx 3min)
add additional cilantro and curry powder to taste, and fish sauce.
