Introduction

Creamed tuna is a budget meal, and can be served over rice or noodles. Top with shredded cheddar, cooked peas, chopped hard-boiled egg, or sprinkle with hot sauce. Ingredients

    6 Tbs. butter (or equiv.)
    6 Tbs. flour
    3/4 tsp. salt
    3/8 tsp. pepper
    3 cups milk
    2 cans tuna in water, drained well

Directions

Melt butter in saucepan over low heat. Stir in flour, salt and pepper. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat.

Gradually whisk in milk. Heat to boiling, stirring constantly. Boil and stir about one minute, or until getting thick. Remove from heat and stir in tuna.

Serve over rice or noodle and top with favorite toppings. Serves 6, about 2/3 cup each.
