Ingredients

    228 grams (3 medium) Parsnips,
    1 medium Onion
    Zucchini approx 1 cup grated
    3 tsp stock powder
    2 cups Broccoli florets
    spray of olive oil
    water to cover the vegies

Directions

Spray saucepan with oil, cook onions until soft and then add the remaining vegies - cover with water and add stock powder - stir well and simmer for 15 minutes (or until the vegies are cooked.

Cool - and then blend until smooth.

Return to the pan and re-heat before serving

Serving Size: Makes 4 large servings (1.5-2cups each depending on how much water)
