Introduction

This was my way to make a quick lunch out of whatever I could find in my kitchen. I served it on a bed of lettuce to keep the calories down, but it's great on bread to make a sandwich as well! Ingredients

    One 12.5 oz canned chicken breast in water
    1/2 a fresh apple, peeled and chopped
    1/2 an onion, chopped
    1/2 a cup of walnuts, chopped
    3 tbsp light mayonnaise
    1 tbsp yellow mustard
    1 tbsp regular/cider vinegar
    salt and pepper to taste

Directions

Drain chicken from can and mix all ingredients in a bowl.

Serving Size: Makes 2-4 servings.
