This is a very light and tasty salad. We really like it on hot summer evenings! This is a very light and tasty salad. We really like it on hot summer evenings!
Number of Servings: 4


    1 cup quinoa, cooked
    1-1/2 cups chopped roasted chicken breast
    1 cup chopped English cucumber
    1 cup halved grape tomatoes
    1 cup chopped parsley
    1/4 cup chopped fresh mint
    4 green onions
    1 garlic clove, minced
    1/4 cup fresh lemon juice
    2 Tbs. olive oil
    1/4 tsp. salt


The original recipe called for couscous, but I use quinoa. It would be tasty with couscous, too. Or substitute white beans for the chicken to make it vegetarian.


Combine quinoa, chicken, cucumber, tomatoes, parsley, mint, onions and garlic in a bowl. Set aside. Combine lemon juice, olive oil and salt in a small bowl; whisk until well blended. Pour dressing over quinoa mixture; toss gently.

Serving Size: Makes 4 1-cup servings
