Ingredients

    1 cup vegan margarine
    1 cup evaporated cane sugar
    1 cup brown sugar, packed
    1 tbsp vanilla extract
    4 tsp baking powder
    4 tbsp water
    2 tbsp vegetable oil
    1/2 tsp sea salt
    3 cups unbleached flour
    1 tsp baking soda
    1 1/2 cups carob chips

Tips

Evaporated cane sugar is vegan, but regular granulated white sugar may not be- many types of regular sugar are processed using bone char from cows!


Directions

Preheat oven to 350 F.

Blend together the softened margarine, sugar, brown sugar, and vanilla extract until smooth. Next, combine the baking powder, warm water, and oil in a separate cup and mix until gelatinous (this is the egg substitute), then add together with the flour, salt, and baking soda. Blend until even and smooth. Finally, add the carob chips and work them into the cookie dough.

Make balls approximately 1-1.5 in. in diameter using a table spoon as an measure. Round the balls out and bake for 12 minutes, or until golden brown.

Serving Size: Makes approximately 48 medium-sized cookies.
