Introduction

Ingredients

2 whole or 4 half boneless/skinless Chicken Breasts,
about 5oz, each
1 tbsp Olive Oil
1 cup, Mushrooms, fresh, pieces or slices
1 clove Garlic
1/2 cup Dry White Wine
1/2 cup Fat free half and half
1 tsp Tarragon leaves
1 tsp Dijon Mustard
Salt and Pepper to taste
Tips
The caloric content does not take into account any rice or other ingredients other than those shown. The sauce is reduced, but not thick. It is very light and can be spooned over the chicken several times throughout the meal.
Directions
1. Heat the Olive Oil in a non-stick skillet. Add the mushrooms and saute until slightly browned. Remove.
2. Add the chicken to the skillet and brown the chicken breasts and heat until there is no pink in the center. Remove.
3. While the chicken is cooking, combine the remaining ingredients. After chicken is removed, pour the wine sauce in the skillet and add the cooked mushrooms. Cook for 10 minutes uncovered over medium heat.
4. Add the chicken breasts to the sauce, cover and heat for about 5 minutes until heated throughout.
5. Serve hot with sauce on the side.
