Ingredients
-
Sugar Free yellow Cake mix I used Pillsbury
(do no mix we will use dry: I didn't have a yellow on I had a lemon flavored one)
1 cup Old Fashion Oatmeal
(not instant! I used Quaker and right now I have Greater Value)
2 cans 15 oz NO SUGAR Peaches in Water
(mine were LIbby's)
2 TBS Splenda Brown Sugar
(can use any alternate sugar free)
1 TBS Cinnamon
(I like cinnamon a lot you may want to use less)
2 Tablespoon of Cornstarch
(I couldn't get it smaller than a 1/4 cup for the calculator)
3 TBS Smart Balance Butter melted.
Tips
My tip is after it is cooled I measure it up in 1/2 measure into individual containers. This does freeze well and can be zapped in the microwave for a few minutes for a nice warm cobbler dessert that won't set you back several hundred calories..
Directions
preheat Oven to 325 degrees
Spray a 9x13 by 2 inch pan with butter flavored spray.
In a Medium sized bowl I mixed the 2 cans of peaches with the Splenda brown sugar, cinnamon and 2 tablespoons of corn starch. Till it was all well mixed and not lumpy.
poured this into the prepared baking dish.
Open the SF Cake mix & measure the 1 cup of Old fashioned oatmeal.
I sprinkled a layer of dry cake mix to cover peaches in juice. Then sprinkle a layer of oatmeal over that then sprinkled dry cake mix then the oatmeal again.
Then drizzled the melted smart balance butter over the dry cake mix/ oatmeal. then placed in the preheated oven. Mine cooked for about 55 minutes
I should have browned the top a little better.
This taste really great especially for 102.1 calories
