Introduction

Ingredients

2 skinless, boneless chicken breast
2 cups broccoli
1 medium onion
1 large green bell pepper
1 can cream of chicken soup
1 tsp curry powder
1 tsp lemon juice
3 large Tbsp mayo
3/4 cup low fat cheddar cheese
Tips
Add 1/2 chicken breast per person. You can increase or decrease the chicken and vegetable portions, and can easily double this recipe if serving more than 4. Great with a side of brown rice or egg noodles.
Directions
Cut up chicken breasts into bite size pieces and brown in a frying pan.
Cut up all of the vegetables into bite size pieces and stem until al dente.
Mix can of soup with mayo, curry powder and lemon juice in a bowl on the side. Add pepper to taste.
Add chicken, steamed veggies and sauce mix into an oven safe casserole. Mix so that everything is distributed evenly. Add pepper to taste.
Sprinkle the cheese on the top.
Place in 375 F oven for about 30 minutes, or until the cheese is melted and crispy.
Optional: Add breadcrumbs on top of the cheese layer before placing in the oven.
