Ingredients

    3 cups diced zucchini
    1large onion
    1/2 cup grated Parmesan
    1/2 cup grated cheddar
    1/2 cup canola oil
    1 cup bis quick
    4 eggs, beaten
    1/2-1 tsp parsley
    Salt & pepper to taste

Directions

Mix all ingredients together in large bowl.
Pour into pie plate.
Bake 35-40 min
