This recipe is a delicious blend of cheese, Egg Beaters,& fresh veggies. It is low in calories, low fat, and it fits most diet requirements. It tastes creamy and is rich in flavor. Ingredients




    1/4 c. Egg Beaters
    1 slice Borden's Fat Free Cheese Slices
    1 Tbsp Green Peppers (your choice, I use Pablano Peppers but any are good)
    Black Pepper (dash)
    Butter (1 pat)
    1/2 Red Ripe Tomato
    1 Tbsp. chopped Onion

Directions

Saute peppers, onions,and tomatoes in skillet . Cook until onions look clear. Add eggs, cheese, and butter. Scramble or make omelet. Season to taste with black pepper . Add salt as desired.

    Sounds great! I've made something similar but used a lo carb flour tortilla. You can leave out the butter & just use whole eggs for less fat and more protein. Just use a no cal cooking spray so your eggs don't stick. - 3/5/08
