Sounds great! I've made something similar but used a lo carb flour tortilla. You can leave out the butter & just use whole eggs for less fat and more protein. Just use a no cal cooking spray so your eggs don't stick.
it sounds awesome and I'll try soon. For replacing egg beaters, use egg white only and discard the yolks and you'll get fat free eggs or u can add 1 yolk per 2 or 3 eggs so it'll be reduced fat.
I live in a country where you can't find egg beaters. Does anyone know how I can replace by real eggs (I mean for the calories. protein etc count)? Thanks very much in advance!
