When asked to bring a dish to a picnic, I always bring this so I know there's at least one dish I won't feel guilty about eating!

This is very light and delicious, especially in the summer when the vegetables are fresh and flavorful! A great way to eat your vegetables!
I I found a similar recipe on allrecipes.com and modified it to lower the oil content and upped the veggies.
I make this on Sunday evening to use for snacking on throughout the week. Very easy to use as a side dish with lunch or dinner as well. The lime is not strong and/or sour on the vegetables but gives it a great flavor mixed with the Oregano and salt.
A light dish, great with any cookout. Best with garden fresh tomatoes, but ripe store tomatoes work well. This is also a great substitute for salad dressing on a tossed salador a marinade for a steak.
This chopped salad can be used with crackers, tortilla chips, or add it to couscous or quinoa. These items are not figured in for calorie count.
