Introduction

Ingredients

    3 large tomatoes (vine ripe, roma, hothouse or heirloom)
    1/2 large cucumber, peeled
    1/4 cup red onion, chopped to preferred size
    1/3 cup olive oil, more depending on preference
    4 tablespoons balsamic or seasoned rice vinegar
    1/4 cup feta cheese, crumbled
    1/4 teaspoon dried oregano
    2 dashes salt
    2 dashes pepper

Directions

Chop tomato, cucumber and onion according to preference. Add olive oil and vinegar and mix all ingredients together. Lastly, add crumbled feta, dried oregano, salt and pepper and mix once more. Enjoy.

Serving Size: Makes 4 - 3/4 cup servings.
