Introduction

When asked to bring a dish to a picnic, I always bring this so I know there's at least one dish I won't feel guilty about eating! When asked to bring a dish to a picnic, I always bring this so I know there's at least one dish I won't feel guilty about eating!
Number of Servings: 4

Ingredients

    2 medium cucumbers, peeled and roughly chopped
    1 small sweet onion (like vidalia), finely chopped
    1 medium ripe tomato, seeds removed and chopped
    1 red bell pepper, chopped
    3 tablespoons cider vinegar
    juice of 1 lime
    1/4 teaspoon dried dill (or fresh if you have it!)
    salt and pepper to taste

Directions

Chop all vegetables and combine in a large bowl. In a separate bowl, mix juice, vinegar, and spices. Pour over vegetables and toss to coat. Chill or serve immediately.
Makes about 6 1-cup servings. Seconds are practically guilt free.
