Ingredients

    8 serving Campari Tomato - (From Campari Website)
    4 cucumber (8-1/4") Cucumber (with peel)
    2 cup Beans, black
    1 cup, crumbled Feta Cheese
    3 tbsp Olive Oil

Tips

The recipe as written is vegetarian and gluten-free. It could be easily modified to be vegan by substituting out the feta. I also think it'd be very tasty with artichoke hearts or black olives, but I haven't made it that way.

I have added chicken breast to it as well, which turns it (I think) into more of an entree, and tastes great. : )


Directions

Cut the tomatoes and cucumbers into bite-sized pieces. Toss in a large bowl. Add a can of black beans, a bit of olive oil, and some italian seasoning or salt (or whatever else you'd want). Toss. Sprinkle feta on top, toss a little more until slightly mixed. Ta-da!

Serving Size: Makes about 6 1-cup servings.
