Introduction

Number of Servings: 4

Ingredients

    2.0 tbsp Extra Virgin Olive Oil
    1.0 tbsp (C) Vinegar, Red Wine (Gr Value)
    2.0 medium Cucumber (peeled)
    4.0 tomato Red Ripe Tomatoes
    0.5 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    0.5 cup, crumbled Feta Cheese
    Salt and pepper to taste

Directions

Peel and cut cucumber. Chop tomatoes and red onion. Mix olive oil, red wine vinegar, salt, and pepper. Pour over vegetables and toss. Add crumbled feta and gently toss. Be sure to stir before serving.

Serving Size: Makes a bowlful, nutrition for serves 4

    Very Good
    Super simple and can be kept in the fridge for 4-5 days easy! Love making a big batch of this and bringing some for lunches. - 2/8/18

    Incredible!
    I will add more salt and pepper next time, but I enjoyed this as a side. Half a serving is probably a side dish size. My lunch tomorrow will be a full serving. - 10/9/17
