Introduction

A light dish, great with any cookout. Best with garden fresh tomatoes, but ripe store tomatoes work well. This is also a great substitute for salad dressing on a tossed salador a marinade for a steak. A light dish, great with any cookout. Number of Servings: 4

Ingredients

    1 cup tomatoes-bite size pieces or cherry tomatoes
    1/2 cup cucumbers--bite size pieces
    1/3 cup onions-bite size piece
    juice of 1 lemon or lime
    1 Tbls Extra Virgin Olive Oil
    2 Tbls Balsamic Vinegar
    Salt and Pepper to taste

Directions

Cut 1 cup tomatoes into chunky bite size pieces or cut cherry tomatoes in half.

Cut 1/2 cup cucumbers into chunky bite size pieces.

Cut 1/3 cup onions into chunky bit size pieces (a little smaller then the tomatoes,but not diced)

Stir together veggies.

Add olive oil, balsamic vinegar and lemon (lime) juice, stir to cover veggies.

Use salt and pepper to taste.

You can serve immediately or let the veggie mixture sit for better flavor.

Makes 4 1/2 cup servings

    I love this recipe for a base but I add Italian seasoning and any peppers I have in the fridge for more flavor. - 4/26/19
