Ingredients

    -1 cup milk (soy, dairy, coconut or almond) with 1 Tbsp lemon juice or vinegar stirred in (can substitute with 1 cup butter milk)
    -2 Tbsp ground flax seed
    -1/2 cup unsweetened applesauce
    -1/3 cup brown sugar or other sweetener
    -1 1/3 cups oats (a few Tbsp reserved for sprinkling on top)
    -1 1/3 cups whole wheat flour
    -tsp cinnammon
    -pinch salt
    -tsp baking soda
    -tsp baking powder
    -3/4 cup chopped almonds
    -1.5 cups frozen or fresh blueberries

Directions

Preheat oven to 350
Let milk and lemon juice mixture sit 10 minutes in a large bowl then add the flax seed.
Add the rest of the ingredients to the bowl in order of what is written. Careful not to over-mix the batter.
Pour into greased loaf pan and sprinkle with reserved oats.
Bake 50-60 minutes or until a toothpick comes out clean.

Serving Size: Makes one loaf of bread
