Ingredients

    pam butter spray
    1 large bell green pepper chopped
    1 med yellow onion chopped
    2 tsp bottled minced garlic
    14 ounce package butterball smoked turkey sausage thinly sliced and halved
    1 1/2 cups chicken stock
    2 cans (10 oz) diced tomatoes and green chillies such as rotel
    2 (15 oz) cans white kidney beans rinsed and drained
    16 ounces peeled and deveined raw shrimp
    2 tbsp dried parsley

Tips

You can half everything in this recipie to make soup for 6 instead of 12.


Directions

Heat a large skillet over med high heat. Spray generously with pam and add pepper, onion, garlic, and sausage to pan. Saute 3 minutes or untill pepper is tender. Transfer to pot or leave in skilley if big enough. Add broth and tomatoes; bring to boil. Stir in shrimp and beans; cover, reduce heat, and simmer 6 minutes or untill shrimp are done (will be pink in color). sprinkle with parsley and let set 5 minutes. Enjoy
