Introduction

Made this on the spot by tweaking up the 5-ingredient soup here on SP. Changed out to F/F refried beans and used NO SODIUM bullion. Added spices, leeks tomatoes and instant brown rice. Ingredients

    1/3 cup Leeks/green onions - white & green tops, minced
    1 packet NO Sodium Chicken Bouillon *Herb*ox
    3 cups Water, tap
    1 14.4 oz can Fat Free Refried Beans
    1 15.5 oz can Black, drained & rinsed
    1 10 oz can Diced Tomatoes w/Green chilies
    1 14.5 oz can Petite Diced Tomatoes
    5 oz frozen Corn (about 1 cup)
    1/2 tsp Black pepper
    1/4 tsp Red crushed pepper
    1 cup instant dry brown rice

Tips

Yields approximately 9 servings of 8 oz/1cup each


Directions

Mix water & bullion into large stock pot.
Add in mince onions/leeks both white & green stems.
Mix in refried bean, whisking to integrate into liquid.
Bring liquid to a boil then add remaining ingredients.
Stir and mix well, lower heat and simmer for 1 hr.
Add in instant brown rice, stir, cover and simmer for additional 5 minutes.


Serving Size: Yields about 10 cups; 1 serving = 1 cup - 8 oz
