Ingredients

    Water, tap, 10 cup (8 fl oz)
    Vagetable stock, 2 tablespoons
    Carrots, cooked, 6 cup slices
    Onions, raw, .5 cup, chopped
    Green Peppers (bell peppers), 2 cup, strips
    Garlic, 1 clove
    17 Bean and Barley Mix- Trader Joe's Brand (Cooked), 6 cup

Directions

Soak beans overnight (optional) in lareg pot of water, then rinse and Drain. Pour 10 cups of water (mixed with vegeable broth) in with beans. In separate pan, cook onion, pepper, garlic, carrots, and basil until soft. Combine mixture with remaining ingredients into the bean pot and cover with more broth. Simmer covered for about 1 hour to desired tenderness. Occasionally check liquid level and add more broth if necessary. Salt and pepper to desired taste. Makes about 16 hearty servings.
