Introduction

Healthful side dish with a zesty twist for a great Mexican dish! Healthful side dish with a zesty twist for a great Mexican dish!
Number of Servings: 6

Ingredients

    2 large Avacados (I preferr Haas) gently ripened
    1/2 of an English cucumber (or 1 peeled regular cucumber)
    1/2 pkg of grape tomatoes (or small cherry tomatoes) cut in half
    Juice of 2 small limes or one large lime
    salt and pepper to taste
    (chopped cilantro for garnish)

Directions

Makes 4 -6 servings

Cut avacados in half; discard seed. Dice avacados in shell peel. Add to bowl.
Slice or dice English cucumber (If using a regular cucumber-peel). Add to avacados.
Slice tomatoes in half or if preferred-leave whole. Add to avacados and cucumbers.
Add lime juice.
Add salt and pepper and mix gently.

    i have been trying to find a recipe to make me like avacados and this was it! i went back for seconds and didnt feel guilty at all! perfect! instead of adding cilantro as just a garnish i mixed a bunch in and it added a nice scent and taste. i only used 1 lime and it was enough for us. :) great job! - 3/4/11
