Ingredients

    1 lb. black beans, 1 can diced tomatoes with jalapenos, 16 oz TURKEY polska kielbasa sausage, garlic, salt, pepper, Emeril's Southwest seasoning

Directions

Soak blacks beans for at least 4 hours, then cook over low-medium heat for about an 1 hr. Then add Emeril's southwest seasoning (or just some paprika, chili powder, salt and a touch of cayenne) and garlic (suit to taste), tomatoes, and sausage cut into thin slices. Let simmer on low heat for about another hour or until beans are done. Serve over brown rice.

Makes 8 one cup servings.
