Introduction

Since my daughter was little, we have always made banana bread in baby muffin tins. They are easier for little hands that way! Since my daughter was little, we have always made banana bread in baby muffin tins. They are easier for little hands that way!
Number of Servings: 48

Ingredients

    2 cup flour
    1 tsp soda
    1 tsp cinnamon
    1/4 tsp nutmeg
    1/8 tsp salt

    1 cup brown sugar
    1 cup (or 2 large) mashed bananas
    3/4 cup applesauce
    1 large egg
    1 tbsp oil
    1 tsp vanilla

Directions

1. Lightly mix the dry ingredients.
2. Mix the sugar and wet ingredients with a mixer until they are frothy (1-2 minutes)
3. Make a well in the middle of the dry ingredients and stir in the wet ingredients until just mixed.
4. Bake in lined mini muffin tins at 350 degrees for 25-30 minutes.
5. Makes about 48 muffins, with 4-5 tsp batter in each muffin cup.

    Very Good
    I made a half batch of these, and put them in regular muffin cups instead of mini cups, and they were done in less than 20 minutes, so I would suggest watching them so they don't get over-done.

    My 1 year old loved it with peanut butter inside.

    These worked very good! I messed up on the directions a little, but they still turned out. Only made about 36 though. Kids and Hubby loved them! They put peanut butter on as a frosting! - 8/21/07
