Ingredients

    3 good sized ham bones
    carrot
    celery
    3-4 bay leaves
    onion
    parsley stems
    1 tsp black peppercorns
    1 tsp kosher salt
    1.5 gallon/24 cups water

Tips

I freeze most of my food waste instead of throwing away, onion peels and ends, carrot tops, celery ends, ect.....and take them out when I make stock. I see throwing away vegetable ends as throwing away money and try not to waste anything.
You can use 1-2 of any vegetables you may have on hand or that are starting to turn on you for this


Directions

Combine all ingredients in a stock pot and bring up to a boil, reduce down to a simmer. Simmer until liquid is reduced to half or until all the flavor has been extracted from the bones. Liquid should be a deep rich color. Will take a good 4-8 hours, this is an all day affair so make on a weekend or whenever you have a day to spare.
