Introduction

Ingredients

    8oz ground beef (cooked and sprinkled with taco spice)
    1 cloves garlic, minced
    1 jalapenos, minced
    1 cup brown rice
    2 cup vegetable or chicken broth
    1 cup black beans, drained and rinsed
    1 can diced tomatoes
    1 bell pepper of choice
    20 baby carrots (diced)
    .5 cup corn kernels
    1 teaspoon chili powder
    1/2 teaspoon cumin
    Kosher salt and freshly ground black pepper, to taste
    Juice of 1 lime
    2 tablespoons chopped fresh cilantro leaves

Tips

best topped with sour cream and a little cheese


Directions

Brown mean and season

in large skillet bring chicken stock to a boil and add rice - cook for 20 mins

add in the rest of the ingredients and cook till rice is soft.
stir frequently
