Ingredients

    ** Chicken
    1/2 lb boneless, chicken breast
    1 tbsp honey
    1/2 tbsp balsamic vinegar
    1 tsp olive oil
    1 large garlic clove, cut in slices
    1/2 tbsp whole grain dijon mustard
    3 strips turkey bacon (diced)

    **Salad
    1 head boston lettuce
    1 large ripe avocado
    1/2 bunch watercress
    1 1/2 tbsp fresh lemon juice
    1/2 small red onion

Directions

makes 2 entrees or 4 appetizers

1. Make salad: place lettuce leaves and watercress in bowl and toss. Peel avocados, slice, and toss wtih lemon juice. Cut onion into small slivers. Add avocado and onion to lettuce and refrigerate.
2. Cut chicken into 3"-4" strips, 1" wide. Heat oil in skillet and stir fry until chicken turns opaque, about 3 minutes.
3. Add honey, mustard, and vinegar and stir to mix well. Add diced turkey bacon and stir fry until bacon is cooked and chicken is tender and moist, about 3 minutes.
4. Spood stir fried chicken strips, bacon, and any remaining liquid on top of salad. Serve with weges of warm, crusty bread.
