Introduction

Easy breakfast cassarole that everyone will enjoy! Easy breakfast cassarole that everyone will enjoy!
Number of Servings: 8

Ingredients

    1 bag of frozen hashbrowns
    1 cup chopped onion
    1 cup chopped green pepper
    2 cups chopped lean ham
    9 eggs
    1/3 cup skim milk
    1 cup grated 2% cheddar cheese
    dash of tobasco
    salt and pepper

Directions

Spray PAM to 8 x 12 baking dish
Spread hashbrowns evenly over the bottom
Spread onions, peppers and ham over the potatoes
Beat the eggs and milk together, add seasonings
Pour the egg mixture over the potatoes
Sprinkle the cheese over the top
Cover with foil and bake @ 375 for approx 1.5 hours or until the knife comes out clean.
Enjoy!

    I reduced this recipe to 2 servings,and made in a loaf pan. it didn't lose anything in the translation! I also substituted egg beaters (low fat diet) This is a GREAT breakfast that I will tell everybody about. Thanks! - 8/11/07
