Introduction

This is a very flavorful, low low low fat chili that is really filling! This is a very flavorful, low low low fat chili that is really filling!
Number of Servings: 6

Ingredients

    3 cans of white beans (navy, cannelini, etc.)
    1 large onion, chopped
    1 green pepper, chopped
    3 jalapeños
    6 large cloves of garlic, minced
    zest of 2 limes
    juice of 1 lime
    1 cup cilantro, chopped
    1 can, 28oz, of diced tomatoes, not drained
    4 cups vegetable stock
    3 cups water
    salt and pepper to taste

Tips

You can add a little sour cream or tbs of shredded cheddar cheese and serve with tortilla chips if you like, but these are not included in the nutritional information.


Directions

Heat dutch oven over medium heat and add onion, green pepper and jalapeño to sauté. Add 1-2 tbs of vegetable stock at a time to keep from sticking. Sauté for 10 minutes. Add beans, tomatoes, garlic, water and broth. Bring to a boil, then reduce heat to low and simmer, coverered for 20 minutes.

Add lime zest, lime juice and cilantro. Simmer for another 3-4 minutes then dish into bowls and enjoy!!

Serving Size: Makes 6 servings, approx 1.5 cups each
