Number of Servings: 25

Ingredients

    2 cups Vegetable Broth
    1 Cup Water
    2 cans or 2 cups Low Sodium Red Kidney Beans
    2 cans or 2 cups Great Northern Beans
    1 Family Size Frozen Mixed Vegetable (10oz.)
    1 cup chopped Onion
    2 cup sliced Squash - Yellow and Green
    2 minced cloves of Garlic
    1 cup Spinach
    1 large can Diced Tomato or 3 cups freshly Diced Tomato
    1/2 cup Tomato Paste or small can
    Several fresh Basil Leaves
    1 tsp Oregano
    2 tsp Season Salt
    1 tsp. Fresh Ground Pepper

Tips

For added flavor, add roasted peppers, sun died tomatoes, pasta, and/or olives. For non-vegetarians, add fish, chicken or pork for added protein.


Directions

Combine all ingredients and bring to a boil. Reduce heat to low heat, and simmer for 1 hour. Garnish with a sprig of fresh basil, salt and pepper to taste. Goes great with fresh baked garlic bread.

Serving Size: Makes about 6 quarts or 25 one cup servings.
