Ingredients

    Bottom layer:
    100 grams Almonds
    50 gram(s) Banaban Coconut flour (by KILORANB)
    100 grams Butter, salted

    Middle layer:
    2 large Egg, fresh, whole, raw
    16 oz Cream Cheese
    75 gr. of Sukrin Gold
    1 tsp Vanilla powder

    Top layer:
    8 oz Cream Cheese
    0.8 cup, fluid (yields 2 cups whip Heavy Whipping Cream
    212 grams Pumpkin, cooked, pureed
    1 tsp Pumpkin Pie Spice
    1 tsp Vanilla powder
    2 tbsp Sukrin Gold

Directions

Bottom layer:
- Blend almonds into flour. Mix with coconut flour and melted butter.
- Bake at 200 degrees celsius for 10-15 min.
- Let the bottom layer cool for a while

Middle layer:
- Mix eggs, cream cheese, sukrin and vanilla powder
- Pour over the bottom layer.
- Bake at 200 degrees celsius for 25-30 min. until the middle no longer jiggles.
- Let cool to room temperature
- Refrigerate for 24 hours

Top layer:
- Mix pumpkin spice, cream cheese, ligtly whipped cream, pureed pumpkin, sukrin gold.
- Pour on the cake.
