Ingredients

    1 large Egg, fresh, whole, raw
    3 large Egg white, fresh
    .5 cup Beans, black
    .5 cup Yellow Sweet Corn, Canned
    .25 cup, chopped Onions, raw
    2 tbsp Cilantro, raw
    .75 cup Kraft 2% Shredded Cheddar Cheese
    2 tsp Old El Paso Taco Seasoning
    1 serving pickled jalapeno peppers diced 1 tbsp (by LADNIL)
    3 serving La Tortilla Factory, Large Original Low Carb Tortilla

Directions

1. Whisk egg whites and whole egg together. Scramble in a skillet coated with cooking spray and set aside.

2. in a large bowl combine the black beans, corn, scrambled eggs, onion, cilantro, shredded cheese, and taco seasoning.

4. Place 1/3 of the mixture in each tortilla and fold over.

5. Grill in skillet until browned and cheese is melted. From here you can eat, or you can freeze them in individual wrappers for later use. To reheat, take out the quesadilla and microwave until hot and cheese is melted, or reheat in a skillet to get the outside nice and crispy.
