Introduction

I LOVE peanut butter cookies. When I first got put on a low fat and low cholesterol diet, one of the things I knew I would miss the most was peanut butter. Then I found PB2 (peanut butter powder). I LOVE peanut butter cookies. When I first got put on a low fat and low cholesterol diet, one of the things I knew I would miss the most was peanut butter. Then I found PB2 (peanut butter powder).
Number of Servings: 15

Ingredients

    1 cup Bell Plantation PB2
    3/4 cup Swerve All Natural Sweetener (granular)
    0.25 cup Egg substitute, liquid (Egg Beaters)
    1.5 tsp Vanilla Extract

Directions

Preheat oven to 350 degrees F.

Line baking sheet with parchment paper. In a medium bowl, mix all the ingredients until well combined.

Spoon 1 tablespoon of mixture about 1 inch apart onto parchment-lined baking sheets. Flatten the mounds with a fork and make a crosshatch (or other) pattern on the cookies. Bake about 10 minutes or until golden around edges Transfer, cool on rack
