Introduction

Chilaquiles, with Chicken Chilaquiles, with Chicken
Number of Servings: 8

Ingredients

    6 Extra Large egg, fresh
    2 cups sliced mushrooms, fresh
    2 cup, chopped white onions
    1medium bell pepper
    8 6-inch corn tortillas
    12 oz raw chicken breast
    3 cup chunky salsa
2 tbsp Extra Virgin Olive Oil
    5 clove Garlic

Tips

Using the broiler while the skillet is in the oven will make the eggs rubbery. Don't do that.

Directions

Heat garlic and olive oil in an iron skillet.

Cut chicken into small pieces and brown in the skillet.

Chop up tortillas, onions, mushrooms, and pepper. Mix in with the chicken and sautee.

Add the salsa, stir until everything is coated.

Smooth the top of the mixture out flat, then crack the eggs over the entire top.

Transfer the entire skillet into an oven at 400F for five or six minutes, until the eggs have cooked.

Slice and serve with cilantro.
