Introduction

Number of Servings: 18

Ingredients

    * Oat Bran, 1.5 cup
    * Flour, white, 1.5 cup
    * Brown Sugar, .5 cup, packed
    * Baking Powder, 2 tsp
    * Baking Soda, 2 tsp
    * Cinnamon, ground, 1 tsp
    * Applesauce, unsweetened, 1.5 cup
    * Egg, fresh, 2 large
    * Vanilla Extract, 1 tsp
    * Raspberries, 2 cup
    Pecans or walnuts are optional and not calculated into the nutritional information

Directions

Mix dry ingredients in a medium bowl. In a separate bowl combine applesauce, eggs, and vanilla. Put the applesauce mixture in the flour mixture. Fold in berries and optional nuts. Bake at 400 degrees for 15-18 minutes. You can substitute blueberries for the raspberries.

You can also use egg substitute instead of the eggs.

    Found that they stuck to the paper muffin liners so make sure to use cooking spray! Very Yummy though! - 11/5/08
