Ingredients

2 boneless skinless chicken (breasts or cubed depending on cooking application)
5TBSP honey
5 TBSP (little less) soy sauce (low sodium)
1 heaping tsp minced garlic
black pepper to taste
Directions
1. Lightly oil honey spoon
2. measure honey into bowl
3. use same spoon to pour soy sauce into measure (the honey coating makes a little less soy sauce in the recipe and helps with the flavor)4.. Add the garlic with a clean spoon (can chop or drain from the preminced jar)
5. Mix all ingredients in a bowl (lightly oiling the spoon helps the honey come off easier)
6. Whisk very well until all incorporated
7. Add chicken to ziplock bag and pour marinade all over
8. squish and manipulate until well coated
9. Let marinate, overnight is ok, but wouldnt go much longer, the longer it sits the saltier it gets.
10. Grill, bake or stirfry.
-If grilling, oil the grate so it doesnt stick
--If baking save some of the marinade to baste about halfway through (at 350 degrees breasts are about 30-45 min, thighs are more like 20-30)
-- If cooking in other ways left over marinade can be heated until boiling and slightly thickened and used as a dipping sauce, or mixed into stir fry veggies
--This recipe can be freezed with or without stirfry veggies AFTER cooking, do not freeze before or it gets WAAAAY too salty.

I didn't like the smell while this was cooking. I used raw honey and it got a kind of acrid smell but I pressed on... it tasted pretty good but I would add some garlic chili sauce next time, it was lacking a little oomph in my humble opinion. All in all, a good combo of ingredients to work with. - 12/6/09
