Ingredients

    .25 cup Olive Oil
    1 tsp Oregano, ground
    1 tsp Basil
    .5 tsp Onion powder
    .5 cup Tomato Sauce
    1 tsp Parsley, dried
    .5 tsp Granulated Sugar
    .5 tsp Garlic
    1 eggplant, peeled (yield from 1 Eggplant, fresh
    1 cup, strips Green Peppers (bell peppers)
    .5 cup, chopped Onions, raw
    1 cup, pieces or slices Mushrooms, fresh
    8 oz Tyson boneless, skinless chicken breast
    5 serving cheese, Kraft Italian 5 cheese blend (1 oz or 1/4 cup)
    1 tsp Salt
    .5 tsp crushed red pepper flakes (by TORI7HARRISON)
    2 tbsp *Flax Seed

Directions

In a small saucepan combine tomato sauce, sugar, oregano, basil, garlic, onion powder, parsley, basil, salt, flax seed and pepper flakes simmer over low heat while preparing eggplant.

To make the base: Slice eggplant 1/3" thick. Brush both sides with olive oil, spread slices on a baking sheet with edges touching. Bake at 400 degrees for 20 minutes.

To make the toppings: While the eggplant is baking, cut the chicken into bite size pieces. Saute the chicken, bell pepper, onion, and mushrooms in the remaining olive oil. Salt to taste.

Assembly:
Remove the eggplant from the oven. Spread evenly with sauce. Sprinkle with half the cheese. Spread the toppings over the eggplant evenly and sprinkle with remaining cheese. B

Bake for 15 minutes in a 400 degree oven until cheese is melted.
