Ingredients

1 & 1/2 c Tomato -Seeded (do not use canned)
1/4 c Red Onion
1tbsp Jalapeno Pepper
1 tbsp Garlic- minced
2 Limes - juiced
2 tbsp Cilantro
Salt - to taste
Black Pepper - to taste
Directions
First, don't be intimidated by 15 minutes of prep work. It's all dicing and there's zero cook time. However, the longer this sits in the fridge, the better it tastes.
Dice the seeded fresh tomatoes, red onion, jalapeno pepper, and cilantro. You can either mince the garlic yourself or do what I do and buy it pre-minced. If you don't like really hot foods, you can reduce the heat by removing the seeds and the ribs from the jalepeno.
Combine all the diced ingredients in a bowl and add the juice of two limes. (Fresh lime juice trumps bottled). Add salt and pepper to taste.
You can enjoy right away or refridgerate for 2 hours. (I like mine better chilled, the flavors get to meld.)
This recipe makes approx. 2 cups.
