Introduction
A tasty, deceptivly healthy burger, good for anyone who loves mexican food but without all the calories! A tasty, deceptivly healthy burger, good for anyone who loves mexican food but without all the calories!Number of Servings: 1
Ingredients

1 Small Chicken Breast, cooked
1 generous slice of extra light cheese
1 tbsp extra light sour cream
1 tbsp medium spiced salsa (can be any strength but i like a bit of spice)
a few slices of fresh, raw onion
a few leaves of crunchy lettuce, such as iceburg
1 Mixed grain, wholemeal or any 'healthy option' burger bun
Directions
1. Cook the chicken in a non-stick pan (no need for oil this way) or on a griddle pan, leave to cool slightly with the cheese slice on top (so it melts nicely)
2. Cut buns in half, and layer the lettuce, onion and sour cream.
3.Add the chicken with melting cheese, and top with salsa
4. Close the bun, and serve! Enjoy!
p.s i serve this with tasty home made potato wedges - just wedge some potatos (leave skin on) and roast in a tiny bit of extra light oil, add a sprinkle of cajun seasoning, or cayene pepper, and serve with home made dip of sour cream mixed with chives and garlic. A very filling, satisfying and relativly saintly meal!
