Ingredients

135g 100% Whole grain bread (7 - 26g slices with crust removed)
115g cucumber, sliced on the thinnest setting of a mandolin (paper thin) with the peel, which makes these quite pretty
53g neufchatel
mixed with 52g light sour cream
2g onion powder
and enough cayenne pepper to ad a splash of color
Directions
1 Serving = 100g
You really have to have a scale to accurately because you have to subtract what you cut away.
Mix the second set of ingredients and spread on half the bread. (I had to cut a slice in half.) Layer on the cucumber, then sandwich.
I used a mini-star cutter from Christmas cookies and the smallest biscuit cutter and was able to get about 20 tea sandwiches, plus 155g leftovers. Leftovers make a messy lunch.
Be creative. Have a star-sized hole in a circle, or just a star cut-away in the top to reveal crispy cuke!
The recipe totals 357g. 202g to sandwiches is about 10g to a sandwich, or 10 sandwiches to a very large serving. I'd think 2 - 3 in a sitting in more likely. Each sandwich being about 13.55cals.
